CARROT FRY

  Carrot are good for health. It has
  a lots of vitamins and minerals. Carrot
  contains Vitamin A. Raw carrot is more
  effective and we can even prepare
  carrot juice. It can be taken as raw
  also. Carrot is often claimed to be
  a good healthy food. Carrot fry is
  lightly cooked without adding water.
  It pairs well with rice as a side dish

  INGREDIENTS

  3 cups of carrot finally chopped
  1/2 part of onion
  3-4 green chillies
  2 nos dry chillies
  2-3 pcs of garlic crushed
  1/4 tsp of turmeric powder
  2 tsp of coconut oil/sunflower oil
  curry leaves, salt

 PREPARATION

 Take a pan and add coconut oil
 into it.  When the oil is heated.
 For seasoning add the ingredients such
 as garlic, dry chillies, curry leaves
 and onion.Saute quickly while adding
 otherwise it will burn. And be sure to
 do it in low flame and when the raw
 smell goes off. Add the turmeric
 powder. Stir it until the raw smell goes.

 Add the chopped carrots into it and
 stir it well until all gets mixed with the
 carrot. Close the lid of the pan and
 cook it in low flame. No need of adding
 water. Stir it frequently because
 we haven't used water and chances are
 more to get burnt bottom. Add little
 oil while stirring. This will avoid from
 catching under the pan. Carrot has
 got water in themselves that leaves out
 while cooking. Fry it without water
 that makes the delicious taste of 

 carrot fry.

 Cook it in low flame and stir in
 between. Carrot is sweet, so to balance
 the sweetness you have to add chilies.
 If you prefer for more or less spicy.
 Adjust it.
